I’ve been soaking up good info from your blog for several months now. Question…Do you and Seth ever eat organ meats? Why or why not?

I am a huge proponent of organ meats and try to serve them as often as possible.
However, Seth does not like liver.
Although he will eat chicken or duck liver pate so I feed him that as often as I can (couple times a month — don’t want to burn him out). I have a good recipe for chicken liver pate on this site — I think it’s called chicken liver mousse. I got it from the Balthazar Cookbook.
When Seth is out of town or out for the evening, I eat chicken livers. I also eat chicken or duck liver with Kate when I’m feeding her lunch or dinner. I made Southern Fried Chicken Livers for myself one night last week. They were a little too salty, but pretty good. I need to tweak the recipe. I think if I get it right, Seth will even eat it.
I also mix ground beef heart in with the ground beef whenever I make taco meat or sloppy joes or hamburgers. You can’t taste it. I try to feed that to Seth at least once a week.
I’m going to make chicken liver crostini this week. I also want to learn to make Jewish chopped liver. I got a recipe from my MIL.
I want to learn how to make liver and onions. And kidney and steak pie. And haggis. I am going to have to wait to do those when Seth is gone.

Do you get your duck at the Santa Monica farmer’s market? I didn’t know they sold them there. I recently bought a duck by mistake at Rawesome. It was in the chicken bin. I wondered why it had such small breasts and thought it was some heirloom variety I’d never had before. I used a “chicken with 40 cloves of garlic” recipe and thought it was kind of fatty. It tasked a lot like a goose I made one Christmas before I knew how to cook. Later I found out it was a duck!
