I’m very busy working today — no time to eat lunch.
But I was starving! So I threw this quick, very nourishing lunch together.
As you can see, I was even in a hurry when I took the picture — all the yogurt is kind of sloshed all over the bowl.
I never claimed to be a perfectionist!
Peaches and Almonds with Yogurt and Cream
Ingredients:
Whole milk organic yogurt
3-4 TBS raw cream
Half of an organic peach, sliced
Handful of crispy almonds (raw almonds, soaked in salt water overnight, then dried, to enhance nutrition)
Maple syrup to taste
You can use any fruit you have on hand. You could also add a little coconut oil or coconut cream to the mix. And/or shredded coconut.
This is a really fulfilling substitute for cereal for those who are following the GAPS or SCD diet. Just use raw honey instead of maple syrup. And use coconut cream instead of cream (if you can’t have cream yet).
What a delicious and easy lunch! It would be great for breakfast, too. And it makes a perfect snack for a pregnant or nursing mother.

I have that book from the library right now. What do you think of it? Are their any recipes you just love. I’m interested if you have any recommendations.

Hi, Gretchen, what a cute photo!
I just bought it. I got it from the library but then realized I needed to own it so I got it from Amazon. I think it’s really good (ha – obviously since I felt the need to actually buy it). I especially like that it has so many lacto-fermented recipes.
I’m going to try two of the recipes this week for lacto-fermentation of tomatoes (since I’m harvesting mine now). I want to do the sauce version and the whole tomato version. I will post about my results.

I just made my own hm yog, i used raw milk but had to boil, but it was soo easy and soo creamy and good!

Yum!
I haven’t tried making yogurt yet. I love filmjolk which is a Swedish kind of yogurt — and you don’t have to heat the milk.

I just got that book for my birthday! DH is so sweet:) I preserved a bunch of plums using the “whey” method from the book. I’m anxious to try them! I also dried a bunch of them and they were divine!
