OK so here’s what I ate today on my first day back on the GAPS Intro Diet:
Before Breakfast:
Detox herbal tea with 2 Biokult
Breakfast:
Rocky Canyon nitrate-free antibiotic-free organic pork sausage cooked in duck fat, then served in a cup of homemade chicken stock (made from pastured organic chickens)
1 cup black coffee (I don’t think it was organic — whoops)
Lunch:
I skipped lunch; I wasn’t hungry
Had some organic herbal tea
Snack:
1/2 of a cranberry kombucha (Synergy brand) — this made me sneeze; I will have to go slower
3 pieces of Applegate Farms organic roast chicken
4 oz. beet kvass
Dinner: (pictured above and below)
Healthy Family Farms roast chicken (organic, pastured) with sauerkraut, on a bed of beet greens cooked in bacon fat
One cup homemade chicken stock
A pot of organic herbal tea
I didn’t have any sauerkraut or beet kvass on hand so I went to Rawesome this afternoon to pick some up. I also got some beets and cabbage so I can get more started.
While I was over there I checked out the new Whole Foods in Santa Monica (Lincoln & Rose). Man! That place is amazing! It makes my local Whole Foods look like a rundown shack in a shanty town. They even had a wood burning pizza oven!
Oh, and they had a gelato and sorbet bar. So fancy. They had some vegan and non-dairy sorbets, so of course I inquired about those (a girl can dream).
I said, “What do you use in the non-dairy sorbet instead of milk or cream?”
The lady said, “Soy.”
I gasped, “SOY?! Oh, no thanks!” visibly grimacing as I backed away in horror. She probably thought I was a lunatic. I didn’t mean to do it — it was a reflex.

Trussing the chicken:
I normally rub the chicken down with lots of butter then sprinkle with sea salt. But obviously I could not use butter so I rubbed it down with duck fat instead. Came out great! Very moist and delicious.
Here are the beet greens cooking in bacon fat:
Actually I added a little duck fat to those as well.
Here’s the chicken coming out of the oven:
I’m feeling a little die-off. Tired and cranky and fatigued. I still feel a little itchy in my nose/nasal cavities but nowhere near what it was. And I have diarrhea — which is a good thing. That means the good bacteria are at work and they are kicking the bad bacteria to the curb.

Thank you AM for your inspiration- it is so much easier to imagine what to eat when you post it.
I really should gaps or at least low carb/high fat diet again
- but economy issues makes it impossible right now – but hopefully after x-mas I´ll be able to return to it again.

Annie, I am having some die off today aswell. I am sooo tired and a bit itchy too. It sucks that whole foods is adding soy and canola oil and alot of other unhealthy ingredients to their food. It would be wonderful to have a place were we can be assured that all we buy is free off all these offending foods. Annie, be careful with the kombucha it is made with white sugar. I spoke with dr.ron and he doesn’t trust it. Also, make sure that the sausages are free from sugar. What do you think of cayenne? Dr. Ron says that since it is an ingredient in kimchi and the bacteria still thrive, that it should be fine. Do you think it kills the good guys? bye

Our sausages and bacon come from Rocky Canyon and they are made with honey.
I don’t know about cayenne but I’m sure it does not kill the good guys.

I started eating beet greens this summer, so yummy! The chicken looks delicious also. I’m looking forward to seeing your food journals, it will help me out with out menus more.

I too have had trouble w/ the Synergy Kombucha; I enjoy drinking it, but I feel drained when I do.
BTW, I heartily suggest loosing the coffee (organic or not).
Any news about those sour cherries??

I normally have no problem with the Synergy Kombucha (or any kombucha for that matter). I think it’s just that I am detoxing now.
I really think I got exposed to some super bugs a few months ago when I was near a feedlot and it was a very windy day. I think that is what is still causing a lot of my problems.
I would give up coffee but for godsakes a woman can only do so much! No bread, no pasta, no French fries, no cheese, no butter, no ice cream, no chocolate, no pancakes and maple syrup, no kefir, no raw milk — AAAAAHHHHHHHHH!!!! It’s so hard sometimes.
I think you have to do the best you can and nobody’s perfect!
I was drinking Dandy Blend for a while and honestly I would not mind drinking that but I don’t like it without raw milk or cream. I can drink black coffee. And it is allowed on GAPS.
I posted about the sour cherries — did you see it? I said you can get regular organic frozen cherries at Whole Foods. They do not have to be sour cherries.

I was just curious if you eat eggshells? I was thinking of crushing it into fine powder. You could put it in kefir (water kefir for you, maybe–I don’t know much about that because I just make milk kefir).
Hope this comment is okay.
I was reading and it seems it is done, but other times I’m warned about salmonella or feces (because eggshells are porous). You’re generally my final word about this sort of thing. And it’d be a good to get the most use out of my money like that

Hi, Helena, I don’t eat egg shells but I have heard of others who do. I do put egg shells into my water kefir.
I would not worry about salmonella or feces as long as you buy your eggs from a farmer you trust. Just rinse them before you consume them or use them in water kefir — or milk kefir. I have never tried putting them in milk kefir.

Oh another thing re: coffee… I could not drink Dandy Blend even if I wanted to. It has barley in it. So that’s out.

Until now, I’ve been a blog virgin, so I don’t know how to find my way around very well. I don’t know how to get back to where I asked the question about the cherries (but I would in fact LOVE to know about finding the sour ones).
I know well about restricted diets and allergies; been living it w/ my son for way too long and it gets old. Have you experimented w/ cheeses other than cow; I get a great percorino made from sheep (and it’s raw) and of course we have the goat cheeses (we’ve had a raw feta and the yogurt is raw as well).
As for coffee, I too loved coffee, since I was a girl (my mom put a bit in my milk to help me get the dreaded stuff down sometimes). I actually gave it up for homeopathy 14 years ago. Have you tried Raja’s Cup? (It’s made of Ayurvedic herbs.) They used to carry it at the coop but stopped when the company decided to double the price. Last I checked it was still available online. I’ll bring one w/ me so you can try it; next time you stop by remind me to give it to you.

Oh, it is you! HI!!!
I didn’t know it was you.
As far as other cheeses go, I’m going to follow GAPS for a while and introduce cheeses as per the plan. It will take a few months at least I’m sure.
See you at the farmer’s market this weekend (not sure if I am coming Sat or Sun). I bought 6 dozen of your eggs at Rawesome on Wednesday and the chicken I roasted the other day was from Healthy Family Farms, too.

Honestly though — never say never — but I doubt I will ever give up coffee. I love it too much. I love wine too. I won’t give that up.
