Life is CRAZY lately — I’ve been working 16-18 hour days lately trying to launch my new website, Real Food Media. My in-laws are coming to town this week (yay!!!) and I want to make some nice meals for us. I also want to try making coconut flour brownies this week, and I’d like to bake a pecan pie for my father-in-law (his favorite; my husband’s favorite, too).
For breakfast, I am going to make some gravlax and I’ll have homemade yogurt cheese (cream cheese) and sprouted bagels and capers. I’ll also make eggs and bacon some days and oatmeal other days (my mother-in-law’s favorite).
We try to eat shellfish at least once a week and organ meats at least couple of times a month (once a week if possible). Both shellfish and organ meats are extremely nutrient-dense.
I also try to incorporate a lot of bone broth (homemade chicken, beef or fish stock) and naturally fermented condiments like salsa and sauerkraut. Both are very good for digestion and absorption of nutrients.
I buy everything organic, if possible. I buy all of our meat, eggs and dairy from animals on pasture (grass-fed). I buy all of our dairy raw (sometimes I buy KerryGold butter which is pasteurized but it does come from grass-fed cows).
SUNDAY (Shellfish Night)
Oysters on the half shell with Meyer lemon
Broiled Salmon with butter and Meyer lemon
Brown Rice Pasta with Homemade Pesto (from the freezer)
MONDAY (Taco Night)
Grass-fed Ground Beef Tacos with Whole Foods Organic Taco Shells (I’m not crazy about these because they are made with sunflower/safflower oil — but Seth loves them)
Black Beans (cooked in homemade chicken stock)
Brown Rice (cooked in homemade chicken stock)
Homemade Guacamole
Homemade Lacto-Fermented Salsa
Raw Sour Cream
TUESDAY
Dinner out
WEDNESDAY
Cheeseburgers (with grass-fed beef, raw milk cheese and sprouted buns)
Tater Tots (organic, made with palm oil)
Baked Beans (made with soaked beans from the freezer, chicken stock, ham hocks, and maple syrup instead of brown sugar)
Homemade Chocolate Ice Cream (with raw cream, maple syrup and organic cocoa powder)
THURSDAY
Dinner out
FRIDAY
Cornish Game Hens (I got these from Healthy Family Farms — delicious roasted with butter and garlic)
Mashed Potatoes with Butter, Cream and Garlic
Corn with butter
Pecan Pie with Homemade Vanilla Ice Cream
SATURDAY (Shellfish Night — normally on Saturday — we just also did it on Sunday this week)
Oysters on the Half Shell
Mignonette Sauce
Salad with Sprouted Lentils, Red Onion, Goat Cheese Feta & Watermelon
Pizza with Goat Cheese, Basil, Garlic and Kalamata Olives (I’m going to cheat and buy Trader Joe’s dough — one day I’ll be making my own dough now that I have my KitchenAid — but not this week!)

Oh, I make coconut flour brownies all the time. They are amazing. I find they can be a bit dry so I put chocolate chunks or chips in the batter. I just made NT’s oyster chowder as well. Super!

Very excited to see my in-laws! We’re going to take Kate to sit on Santa’s lap.
I got this watermelon at Trader Joe’s. I should have looked where it was from. I imagine maybe from Mexico… It does not taste as good as local summer watermelon. But I was really craving it for this particular salad, which I just love.
My friend Jungleen told me about the coconut flour brownies. She and her husband loved them. The recipe is on the bag of coconut flour that you can buy from Tropical Traditions (maybe on their website too?). If it’s good, I’ll post.

Yes rapadura. I actually found sucanat at Surfas (my local restaurant supply store). Same thing as rapadura. It doesn’t say organic — but it was super cheap. I try to do organic as much as possible of course — but I don’t always.
So I’m going to use the sucanat in place of brown sugar and maple syrup instead of brown rice syrup.

I am not sure. There are some who say it’s OK. Dr. Mercola says it’s “an expensive form of sugar”. I’m skeptical. Seems too processed.
