I’ve been really enjoying this cookbook, “Cooking with Coconut Flour” by Bruce Fife. I just can’t believe how great all the recipes turn out. Coconut flour blueberry muffins, coconut flour bacon & cheese muffins, coconut flour pancakes. Everything has been delicious!

And as many of you know, coconut is so good for you. Coconut flour is low-carb, gluten-free and it’s easy to digest (it contains no phytates so it needs no soaking, like wheat flour does).

Here’s the good news: somehow I ended up with a second copy of the book. Instead of returning it, I have decided to give it away to one of you, my lucky readers.

    Why sould I win this book?? Because I am on a Gluten free diet! (actually a gluten free, sugar free dye free diet) Being able to cook with Coconut flour and have actual recipies would alow me to eat a more normal diet. I really want this book!!!

    I’m on a low-carb diet, and recently made the decision to cook more at home. It would be great to have a cookbook to give me some more ideas to increase my variety.

    I would love to get this book and learn all about cooking with coconut. I am trying to eat a WAPF-style diet as best I can. I think that coconut is awesome for this, because as you said, it does not have to be soaked, and it can be used to make various low-carbohydrate baked goods. I used to think that the only low-carb baked foods were additive-filled diet bars. Coconut is also easy on one’s blood sugar (I’m working hard to eliminate the associated mood swings, as well as a hormonal imbalance).

    I want to win this wonderful cookbook because I have 2 huge bags of Tropical Tradition’s coconut flour and 1 bag of Bob’s Red Mill coconut flour in my cupboard and I need to start baking before they expire! I have already made the blueberry coconut flour muffins but it only used 1/4 cup of the flour! They were delicious. I added grated lemon zest to the batter YUMMM!

    This cookbook could be what it takes for me to try a grain-free diet. That grain-free diet may fix whatever is wrong with Husband’s and my adrenal/endocrine systems. Once that’s fixed, we will become super-fertile and have a baby. So, you wouldn’t be giving me the gift of a cookbook, you would be giving me the gift of a child :)

    Everyone else has really good, legitimate reasons, so I felt like I needed to up the ante a little.

    I would love this book. I made the coconut flour bacon and egg muffins and they were wonderful. Here’s the thing. My husband really liked them. He is retired military and now in schooI and these are easy for him to grab in the mornings. I am slowly getting him to eat this way and this would really help me to have alot more ideas.

    My son is on a gluten-free diet, so most of my cooking for the whole family is gluten-free. I have never used coconut flour. We love using coconut oil, so it should be an easy transition. Thanks so much for offering this giveaway!

    I’m not interested in winning the book, because I already have it, but I do want to put in a plug for it.

    I love that book! I had all but given up baking, making pancakes, and crepes, because my family eats a low carb, nearly no grain diet (now gluten-free, too), but coconut flour changed that.

    One of the best recipes in this book is the coconut butter cookies. The recipes without grated coconut do not have a particularly coconutty flavor, either. And many, if not most of the recipes have a lower sugar version, which I find are definitely sweet enough (actually even a bit too sweet for me). But they are sweet enough even for people who constantly bombard their taste receptors with sugars. I don’t bother with the stevia to replace the missing sugar, either. When I’ve served coconut flour recipes to others, no one knows they are “unusual” (low sugar, gluten-free, higher in protein, etc.).

    The low sugar muffins are good, too, but I found they worked best with aluminum baking liners instead of paper liners or greased tins (stuck too much). The bread recipe is good, but without the gluten, has the texture of a pound cake, not conventional bread. It’s great in French Toast.

    Coconut flour is gluten-free, too, but as such, needs a good binder. Many of the recipes use eggs as binder, so be sure to have a lot of eggs on hand. The eggs will add to the expense of these recipes, too, but eggs are a super budget-wise protein source, making most coconut flour recipes a better source of high quality protein than conventional baked goods. So IMO, they can still be grocery money well spent, despite the seemingly higher comparative cost.

    Coconut flour is more expensive, about $6-8 per pound, than wheat flour (which is a commodity crop raised in surplus amounts and tax-subsidized, so artificially cheap) but a package goes a long way because many of the recipes only call for about 1/4 to 3/4 of a cup, compared to similar wheat flour recipes that might use 1-2+ cups.

    Bob’s Red Mill makes a nice coconut flour, so ask for it to be stocked anywhere you see other BRM products. But good deals on other brands of coconut flour can also be found online.

    One minor point, but do you really mean “Americans” or rather, you’ll only ship to US postal addresses? I’m sure you are focussing on the domestic vs. international postage issue, not whether someone is a US citizen or Permanent Resident, etc. But being married to a former Permanent Resident (now Naturalized Citizen), these things pop out at me. :-)

    I would love to win this book! I’ve been pining away for it since you first mentioned it on your blog. My son has autism, and we are on the gfcf diet. He has some major sensory issues…so his diet is extremely limited. He loves bread though, and I can’t seem to find a gfcf loaf that he will eat. I keep thinking that maybe this book would have the answer!

    My son has recovered so much from a traditional diet, supplements, and lots of love! Honestly, it was your blog that inspired me to switch over to traditional foods. Which, has completely changed our family. Thank you for all you do!

    Here I am suffering on a grain free diet (not truly suffering). My family is crazy in love with my molasses cookies and all my cookie recipes, in fact they refuse to eat other cookies now.
    I just sit there and watch them enjoy their cookie with raw milk. I just have my glass of milk and watch them sprinkly crumbs down the fronts of their shirts. My husband is nice enough to let me smell his cookies before he devours them.
    I sure would love to have a cookbook that would show me how to make something tasty to nibble on besides meat, cheese, and veggies. A girl needs a cookie or a muffin or a slice of toast every now and again.

    I love cooking and especially baking. I was recently diagnosed as having pre-diabetes. I want to cook low GI biscuits, cakes and muffins. Especially muffins because I love them. This book will help me do that.

    I recently lost 33 lbs. I am so happy about my new size but was feeling like I may never enjoy another baked good again. Until I discovered coconut flour. I have been using organic foods and raw dairy products along with coconut oil as my main cooking oil for a long time. I continue to find new and healthy things for my family to eat. Its important for our family to be in controll of our own health. So to make a long story short, I am so excited about cooking with coconut flour I am devouring every bit of information I can to bring this new food into my home. I just ordered 6lb of organic coconut flour and cannot wait to try a new recipe!!!
