Real Food Wednesday This Week: Bone Broth Recipes

I’m hosting Real Food Wednesday this week on Cheeseslave (Kelly the Kitchen Kop hosts on alternate weeks). I was planning for the theme to be Healthy Desserts (for Valentine’s Day) but I have changed my mind.
Kimi at The Nourishing Gourmet is hosting a carnival, Nourishing Chocolate Recipes, on Tuesday February 10th. Since the topics are so similar, I figured it would be best to choose a different theme for Real Food Wednesday.
Also, this way I can participate in both carnivals — I didn’t want to have to come up with two different dessert recipes (or recycle one of them). I hope you will participate in both carnivals, too!
Here’s my new theme for this week: Bone Broth Recipes & Tips
I’m in love with bone broth. It’s extremely nutritious and very good for digestion and absorption of vitamins and minerals. It also gives food so much more flavor. And it’s so economical.
Bone broth is also vital for those of us who are sensitive to dairy products. If you can’t drink milk, you should be drinking lots of bone broth to get enough mineral and calcium to build strong bones and teeth.
So this Wednesday, please post your recipes and tips for making bone broth (chicken stock, beef stock, fish stock) — OR recipes incorporating bone broth (soups, stews, chili, beans, rice, risotto, you name it!).

I make chicken bone broth pretty often. I’m nt sure if it’s any better than any other recipe (infact I don’t know anyone else who makes it in real life!) but this is our version which we are happy with.
one large organic chicken roasted the night before which we eat for dinner.
that night we pick off all leftover meat and save it for chicken soup our chicken salad usually.
then the bones goes into a large crock pot with:
1 onion peeled and cut in half
2 unwashed carrots (b/c I’m crazy and I think the dirt of good for you)
2-4 unwashed celery stalks
3-4 bay leaves
LOTS of sea salt and pepper
a tad of vinegar if i remember (I often forget that step)
(after cooking we put through a strainer to catch the bones.)
I turn on the crock for two full days at least. I find one day is ok… but 2+ days make super concentrated broth which I can make the best soup out of… if it’s super concentrated then I can add a can of coconut milk to it and make it “creamy chicken soup”. my son is allergic to milk so this works great for us. we freeze it and save it for when we get sick. as soon as throat starts hurtin’ or a nose starts runnin’ or a tummy starts achin’ we pull it out and heat it up…*NOT* in the mircowave
it’s my favorite use for bone broth. if it’s am emergency then we don’t both even make soup – I just give mugs of broth to everyone to sip. works every single time!
