Wow, it’s been a long six months. Since last October, I’ve been insanely busy launching our new blog network, Real Food Media on top of taking care of my toddler, Kate. While I don’t regret a minute of it, six months is a long time to do consecutive 12-16 hour days.
I decided over the Memorial Day weekend that I need to reprioritize and be much more judicious about how I am spending my time. Partly for my health (yes, I am still recovering from adrenal fatigue) and partly for my sanity.

These crackers are wonderfully crisp and have a pleasing crunch. They taste like fancy store-bought gourmet crackers to me. They are also very healthy. The phytic acid is most flours blocks minerals and this causes nutrient deficiencies which can lead to osteoporosis, cavities, and other health problems.

The American Academy of Environmental Medicine, “an international association of physicians and other professionals dedicated to addressing the clinical aspects of environmental health,” declares that genetically engineered foods “pose a serious health risk” and calls for a moratorium on GMO foods.

Many farm fresh foodies and locavores have experienced the frustration of trying to encourage our families and friends to support local farms. A few cotton to the idea, but many do not. Rather than alienating my close friends and relations by becoming a noodge, I decided to focus on delivering the good news of a healthier way to eat on folks I hadn’t yet met.

I was delighted to catch the new documentary, FRESH, by Ana Sophia Joanes at the Newport Beach film festival last month. FRESH is a movie about modern food production and supply, how messed up it is, the ramifications of industrial agriculture, and what we need to do to fix it. This is a must-see, folks. Absolutely do not miss this movie. Not only is the film informative and captivating, it’s so emotionally powerful I was moved to tears more than once (okay, let’s be honest, my cheeks were wet throughout).

I grew up in Texas. Nachos are one of my very favorite foods. Unfortunately, most (all?) tortilla chips you buy at the store are very bad for you. What makes them so bad? Well, most tortilla chips are made from genetically modified corn. On top of that, they’re usually fried in oils that are also made from GM crops: non-organic corn and soybean oil. Even if you buy organic tortilla chips, the organic oils they fry the chips in are unhealthy. Vegetable oil, sunflower oil and safflower oils are typically rancid (hello, free radicals).
Wouldn’t it be nice if you could find organic non-GMO tortilla chips fried in lard, palm oil, or coconut oil? But it’s not possible (at least I haven’t found them). So I’ve started making my own homemade tortilla chips. They’re easy to make, delicious, very healthy, and they make the best nachos.
