Hi, I have just recently discovered your blog and I just wanted to say how much I love it and I really appreciate the work that goes into it. I made your chicken liver mousse recipe last week, what an awesome, simple way to make what I always assumed was a far more complicated dish!
Your blog is where I discovered Cultures for Health, so I have to thank you for that. I was blown away to find a place that sells starters for pretty much every fermented food you could want, I’m sure others feel the same way, and there really isn’t anything else like it out there. It is the holy grail for fermented foods! I really enjoyed the podcast and learned so much, definitely one of my favorites.
One question – when you use an eggshell for your water kefir, is it important that it be very clean, or does a good rinse suffice?

Cultures for Health is an awesome site with a lot of great products, though I was disappointed to find no soy cultures.

Finally listening to this podcast. Another good show!
I also feel really blessed. There is a regional brand here in the northeast Real Pickles, which offers lacto-fermented veggies (a lot of cabbages, carrots, pickles, now beets) and condiments. They’re delicious and I eat them several times a week.
