Did You Know…

How Much Fish are You Eating?
The Harvard School of Public Health says we should be eating fish at least twice a week – and this applies especially to pregnant and nursing mothers and small children. Unfortunately, nearly half of Americans eat seafood only occasionally — or not at all.
Can’t I Just Take Fish Oil Capsules?
Nope. According to Chris Kresser at The Healthy Skeptic blog, “It appears that the presence of other fats in the fish activates processes required to absorb the EPA and DHA properly. This explains why the EPA and DHA are better absorbed from eating whole fish than from taking fish oil.” Chris continues:
In one study comparing the effects of fish and fish oil, researchers found that levels of DHA after 6 weeks of salmon consumption were nine times higher than after fish oil administration.
How About Organ Meats?
Most people won’t touch organ meats (unless they live in France, where pâté is served at most restaurants, or Mexico where they eat tripe for breakfast). And yet, organ meats like liver, bone marrow and heart contain anywhere from 10-100 times the nutrients of muscle meats like steak and chicken breasts.
Organ meats also contain vitamin K2, the nutrient Dr. Weston Price called “activator X” that helps prevent (and even reverse) cavities and crooked teeth. There’s also a lot of research to suggest that adequate levels of vitamin K2 can help prevent osteoporosis, heart disease, seizures, and kidney stones.
Organ meats are also a heck of a lot cheaper than muscle meats — and that matters when you’re trying to feed a family on a budget.
So Why Aren’t We Eating More Meat & Seafood?
Many of us don’t know where to buy seafood, and have no clue how to prepare it. (Ask me about the first time I tried to shuck oysters!) And we may perceive seafood to be too expensive.
When it comes to meat, most of us fall back on the same meals over and over again — ground beef and chicken breasts. It gets boring — but we don’t know how to cook the other cuts of meat. We may have tried a brisket in the past but it came out like shoe leather.
And organ meats? Forget about it! How do you get your family to eat liver when just saying the word makes them squirm?

I’d love to learn more about cooking organ meats and seafood. I cook chicken livers for my family sometimes, but I just sauté them in a bit of butter with some onions, nothing fancy. I love seafood but tend to only eat it when I eat out and I don’t eat out very often.

My in-laws sent us the “toxic seafood” video off of You Tube, and as a result they, and my brother-in-law’s, family all stopped eating seafood and are telling everyone else not to eat it. We are the only hold out and need more information on buying appropriate seafood. When we DO get something like proper Wild Alaskan Salmon my husband complains it tastes different than the regular salmon. We definitely need help choosing and cooking safe seafood. Help!

Oh, what a wonderful series this will be, for sure!
I grew up in the middle of this country without access to fresh seafood. We never cooked it. How I would love to acquire the knowledge to cook it well so that my 7 children can do it as well!
I’m also interested to learn more about organ meats. Beef liver was often served in our home, but I’ve never prepared it for my own children (mainly due to my husband’s attitude toward it).

I would love to learn more about cooking Wild Seafood. I live in MI so we don’t have much local seafood but I do get frozen, good quality wild when I can. I have some salmon and cod in the freezer. I didn’t grow up eating much fish and I am not a huge fish fan, but my kids and husband are. I want to learn good recipes and ways to cook it so I can learn to eat more of it.

My husband and I are new readers of cheeseslave and as a family dealing with a variety of conditions – fibromyalgia, IBS and pre-diabetes – we’re doing all we can to learn a better way of feeding our family and ultimately a healthier way of living. This looks like a great class for me. I had been a vegetarian for 27 yrs until about a year ago. Having low thyroid and a child with autism really made me rethink what I was doing with our family. I would love to learn to cook meat and seafood so my family loves it. I’m still a little timid about cooking organ meats but, I’m up for it (love the benefits). I’m psyched!

Gosh, there is so much I want to learn! I am really clueless about the miriad of beef cuts. It would be nice to know what to do with them all! I also have a munu-panic attack when I try to figure out what fish is safe, sustainable, and environmentally friendly.

The schedule of classes is appetizing! I would sure like to learn more about preparation and cooking of meats and wild seafood. I want to buy more grass fed meats but I want to be confident knowing that the way I prepare them will not make them inedible (think shoeleather). Also, after having just read and devored “The Mood Cure” I am convinced that the American Diet is sorely deficient in protein. I’m looking forward to the addition of more healing foods in our diet! I would love to take this class! I really need help learning what to do with seafood – we have some great sources in Seattle, and I always look longingly at the vendor stalls at the farmer’s market, but I ultimately walk on by because I’m unsure of what I would do if I bought some of their amazing-looking oysters or clams or fish.
I would also like to learn more about how to properly cook grass-fed beef. I had some success on the grill once I learned to grill low-and-slow, but in general, I want to know how to do much more, and do it properly!!

What a wonderful class! I have been trying to eat sugar-free, low-carb, and grain-free for a year now, due to some of the same health issues you mentioned having. It’s hard because it is really a process of relearning everything I thought I knew about healthy eating. I had about 3 recipes in my 3″ recipe binder that I could still make. So that is what I would look forward to most in this class – recipes! and someone to show me “how” to do this thing better!

I’ve avoided buying a side of beef because there are too many cuts I’ve never used before. It’s been easier to stick with what I know. I’d love to learn about what to do with the different pieces before buying that much meat and wrecking a meal.

When I found out about this online Cheeseslave’s online cooking course, I became super excited and happy! You see, for nearly 15 years, I have been suffering with a chronic, autoimmune issue (liver/intestines) which has greatly affected the quality of my life. Trust me, when you live with an issue like this — constantly getting sick — where the doctor says the only solution is a plethora of drugs, then frustration increases.
Earlier in April, a GI doc gave me my first clue: he said that carbohydrates were causing my symptoms. An online search led me to discover the Specific Carbohydrate Diet (written by Elaine Gottschall). But, little did I know that I would have to embark on an entire new way of life. I’d have to give up most, if not all processed foods (because they contain sugars and other “illegals). That means, I had to learn how to cook everything from scratch. I love food — but the problem is my cooking isn’t flavorful, and my repertoire is zucchini lasagna, chicken soup (usually flavorless) and a spinach fritata. That’s it. No joke. I’ve burned or undercooked lamb, steaks, etc; on so many occasions — I just can’t count.
I’m excited because this course would give me the tools to survive on the SCD. Making delicious breads (with almond and coconut flour), creating delicious soups, bone broths, working with organ meats and cooking seafood. A LIFESAVER for someone like me on the SCD. I’m still going to sign up for the course — even if I don’t win. But here’s to hoping!

I would love to learn how to cook various cuts of meat and I am especially interested in getting my family to eat organ meats and seafood. We bought half a cow last year and it’s been awesome having all this wonderful grass-fed meat in the freezer. I’m going to show in a video in the class how I store it in my chest freezer (it’s very organized for a normally unorganized person).

I would love to know how to best obtain and prepare seafood as we are inlanders with little to no access to fresh fish of any kind. I would also love to learn the best ways to the stretch the cuts of meat and get the “best bang for your buck” so to speak to make eating this way the most affordable. Oh getting the fam to eat organ meats–that would be great. Pretty much whatever you have to teach I would “eat” up

I am a breastfeeding mom of a three year old toddler and am probably not getting enough protein–it’s just tough having the time to prepare “real food” to eat all the time. This class would hopefully help me with many different protein options. I spent almost 9 years a vegetarian (nearly vegan), so learning to cook meat has been difficult. Okay, I posted it in the wrong place, I now realize. Here again why I’d like to do this ecourse is that I can use some encouragement for using organ meats. I do make paté sometimes, but that is it really. I have kidneys in the freezer for months now, not daring really to cook them;-) With fish I also could have someone taking by the hand, not that I do not dare, I love seafood, but do not know very well how to use it. It is not in my system so to say.

I would love to be more confident in my seafood cooking…my household loves it but it rarely makes an appearance on the menu–I’m always uncertain about cooking and buying seafood. Well, what hasn’t been said? I am new to this site, but I am inspired by it. I am stumbling forward along the path to better health. I gave birth at home 3 months ago to my first child. He has propelled my efforts because I want to be the best example I can be and I want to have energy. I have been sugar free for about 2.5 months and grain free for about two months. My partner has just joined my efforts to be healthy, but he works a lot and his job is not very conducive to healthy eating. I am a committed mother and partner, I want to provide for them, but it needs to be economical and I need my skills honed. I can’t say that I am excited about the organ meats or the fish, but I am always willing to try new things. And the way you described them made ‘em sound pretty yummy. I would love to be one of the winners because I love winning! and it would come at a time when we could really use it, both economically and gastronomically . Thanks for the chance!
