Protein & Fat Is Where It’s At
Protein is made up of chains of amino acids, which are the precursors for the neurotransmitters in our brain. The amino acids in protein are the building blocks of endorphins and serotinin. According to Julia Ross, pioneer in the field of nutritional psychology and author of The Mood Cure, lack of protein causes anxiety, depression, insomnia, ADD, and alcohol/drug addiction, and a host of other problems.
Julia says we need 20-30 grams of protein per meal — three times a day. And that’s just to maintain our current brain chemistry. Animal protein is the most nutrient-dense form of protein — so why not just cut to the chase? Anxious? Depressed? You need more protein!
It’s essential to always eat fat with protein. I’ll teach you how to cook with healthy fats — and if you’re dairy-free, there are plenty of non-dairy substitutes.
The Problem with Grains
Grains are hard to digest and many of us are trying to heal damaged digestive tracts. To heal the gut, it’s essential to avoid foods that are hard on the digestive tract and eat plenty of easy-to-assimilate foods like meat, fish, broth, and non-starchy vegetables.
If you have gluten intolerance, dairy sensitivities, or other food allergies, you need to heal your gut. Sometimes it isn’t enough to go gluten-free — many people need to go completely grain-free for a period of time to heal the digestive tract.
Fast Oxidizers: Born Meat Eaters
Some people need a lot more protein than others. Dr. Nicholas Gonzales, a New York-based oncologist famous for his treatment of cancer, reports that depending on the acid/alkaline balance of the blood, some patients need meat every day.
If you eat the wrong type of food for your type for too long, you can end up very sick — even getting cancer.
Why “Grass-fed Meat” and “Sustainably Raised Seafood”?
You know all those studies that say meat causes cancer? They’re talking about processed meats that come from factories and CAFOs (concentrated animal feeding operations). Grass-fed meat is an entirely different animal (excuse the pun). According to Eatwild.com:
CLA (conjugated linoleic acid) is a healthy fat that has been shown to fight obesity, cancer, and diabetes in lab animals. A hamburger from grass-fed cattle has two and a half times more CLA than a hamburger from cattle raised in a feedlot.
Did you know that eating fish just once or twice a week can reduce your risk of dying from heart disease by 36%? The Harvard School of Public Health says that the benefits of eating fish outweigh the risks of mercury.
Unfortunately, most people don’t eat enough seafood and aren’t reaping the health benefits. Seventy percent of Americans eat seafood less frequently than once a week, and nearly 50% of Americans eat fish rarely or not at all.
Many people are thwarted by fears of the cost of seafood, are not sure where to buy it, and don’t know how to prepare it. You’ll learn all this and more in this class.
It Ain’t Easy

Why I’m Teaching This Class
I started my blog, CHEESESLAVE, for two reasons. One, because I love food. Two, because I learned firsthand how food can completely transform your life.
When I was 25, I was diagnosed with rheumatoid arthritis, chronic fatigue syndrome, adrenal exhaustion, and chronic respiratory allergies and sinus infections. I was young, but I felt like an 90-year-old woman. Getting out of bed was a challenge; I was constantly getting sick. I was exhausted and miserable.
By changing my diet, I was able to reverse all my symptoms. Instead of ending up in a wheelchair, I get to enjoy my life.
I spent two years healing my gut on a gluten-free, sugar-free diet. Instead of shopping at the regular grocery store, I started shopping at the health food store. I ate a low-carb diet of mostly meat, fish and some dairy. Zero white flour and sugar.
Making such a radical change in my eating habits wasn’t easy. But it was worth it. My personal transformation helped me see how powerful food is and how greatly it impacts our lives and our health. I want you to experience the good health I now enjoy.
