I’m excited to announce that I’m going to be teaching an online cooking class starting Wednesday August 18, 2010. It’s called Surf & Turf: Cooking Wild Seafood and Grass-fed Meats. And I’m giving away two spots in the class!

Did You Know…

  • Omega-3 fatty acids in seafood and grass-fed meats can prevent depression and Alzheimer’s disease?
  • Pregnant and nursing mothers eating seafood and grass-fed meats can increase their children’s IQ and prevent ADD?
  • According to Julia Ross, author of The Mood Cure, we need to eat 20-30 grams of protein three times a day — just to maintain our current brain chemistry?

How Much Fish are You Eating?

The Harvard School of Public Health says we should be eating fish at least twice a week – and this applies especially to pregnant and nursing mothers and small children. Unfortunately, nearly half of Americans eat seafood only occasionally — or not at all.

Can’t I Just Take Fish Oil Capsules?

Nope. According to Chris Kresser at The Healthy Skeptic blog, “It appears that the presence of other fats in the fish activates processes required to absorb the EPA and DHA properly. This explains why the EPA and DHA are better absorbed from eating whole fish than from taking fish oil.” Chris continues:

In one study comparing the effects of fish and fish oil, researchers found that levels of DHA after 6 weeks of salmon consumption were nine times higher than after fish oil administration.

How About Organ Meats?

Most people won’t touch organ meats (unless they live in France, where pâté is served at most restaurants, or Mexico where they eat tripe for breakfast). And yet, organ meats like liver, bone marrow and heart contain anywhere from 10-100 times the nutrients of muscle meats like steak and chicken breasts.

Organ meats also contain vitamin K2, the nutrient Dr. Weston Price called “activator X” that helps prevent (and even reverse) cavities and crooked teeth. There’s also a lot of research to suggest that adequate levels of vitamin K2 can help prevent osteoporosis, heart disease, seizures, and kidney stones.

Organ meats are also a heck of a lot cheaper than muscle meats — and that matters when you’re trying to feed a family on a budget.

So Why Aren’t We Eating More Meat & Seafood?

Many of us don’t know where to buy seafood, and have no clue how to prepare it. (Ask me about the first time I tried to shuck oysters!) And we may perceive seafood to be too expensive.

When it comes to meat, most of us fall back on the same meals over and over again — ground beef and chicken breasts. It gets boring — but we don’t know how to cook the other cuts of meat. We may have tried a brisket in the past but it came out like shoe leather.

And organ meats? Forget about it! How do you get your family to eat liver when just saying the word makes them squirm?

I’ve avoided buying a side of beef because there are too many cuts I’ve never used before. It’s been easier to stick with what I know. I’d love to learn about what to do with the different pieces before buying that much meat and wrecking a meal.

I found out about this site through Food Renegade, and I signed up through e-mail for your blog.

When I found out about this online Cheeseslave’s online cooking course, I became super excited and happy! You see, for nearly 15 years, I have been suffering with a chronic, autoimmune issue (liver/intestines) which has greatly affected the quality of my life. Trust me, when you live with an issue like this — constantly getting sick — where the doctor says the only solution is a plethora of drugs, then frustration increases.

Earlier in April, a GI doc gave me my first clue: he said that carbohydrates were causing my symptoms. An online search led me to discover the Specific Carbohydrate Diet (written by Elaine Gottschall). But, little did I know that I would have to embark on an entire new way of life. I’d have to give up most, if not all processed foods (because they contain sugars and other “illegals). That means, I had to learn how to cook everything from scratch. I love food — but the problem is my cooking isn’t flavorful, and my repertoire is zucchini lasagna, chicken soup (usually flavorless) and a spinach fritata. That’s it. No joke. I’ve burned or undercooked lamb, steaks, etc; on so many occasions — I just can’t count.

I’m excited because this course would give me the tools to survive on the SCD. Making delicious breads (with almond and coconut flour), creating delicious soups, bone broths, working with organ meats and cooking seafood. A LIFESAVER for someone like me on the SCD. I’m still going to sign up for the course — even if I don’t win. But here’s to hoping!

I have two things, one is learning how to make organ meats. My husband is such a picky eater and we’re about to start gaps, I know he’ll only follow it if I can make meals that still taste good. Also, how to do this and save money. Very important for the budget!

I would love to learn how to cook various cuts of meat and I am especially interested in getting my family to eat organ meats and seafood. We’ve been talking about buying 1/4 or 1/2 of a cow, so this would tip the scales for us to do so! Also – if I miss the class while it’s going on, would it be something I could take at a later date?

We bought half a cow last year and it’s been awesome having all this wonderful grass-fed meat in the freezer. I’m going to show in a video in the class how I store it in my chest freezer (it’s very organized for a normally unorganized person).

I would love to know how to best obtain and prepare seafood as we are inlanders with little to no access to fresh fish of any kind. I would also love to learn the best ways to the stretch the cuts of meat and get the “best bang for your buck” so to speak to make eating this way the most affordable. Oh getting the fam to eat organ meats–that would be great. Pretty much whatever you have to teach I would “eat” up :)

I am a breastfeeding mom of a three year old toddler and am probably not getting enough protein–it’s just tough having the time to prepare “real food” to eat all the time. This class would hopefully help me with many different protein options. I spent almost 9 years a vegetarian (nearly vegan), so learning to cook meat has been difficult. This class would be very helpful!

I would love to learn how to cook organ meats and fish. Since my 7 month old is beginning solids, I want to make delicious, nutrient dense foods for him. I would also appreciate learning where to find great seafood. I have a good source for pastured and grass-fed meats, but have no idea where to get sustainable seafood.

He’s already a good cook, though with limited repertoire, but he sees absolutely no difference in one type of food source over another. Okay, I posted it in the wrong place, I now realize. Here again why I’d like to do this ecourse is that I can use some encouragement for using organ meats. I do make paté sometimes, but that is it really. I have kidneys in the freezer for months now, not daring really to cook them;-) With fish I also could have someone taking by the hand, not that I do not dare, I love seafood, but do not know very well how to use it. It is not in my system so to say.

I really want to learn to cook seafood! I’m trying to add more to our diet, and so far I can make tuna sandwiches and one salmon recipe! I want to try organ meats too but have a seriously picky eater, so I need to find something sneaky like pate to introduce them…

I would love to be more confident in my seafood cooking…my household loves it but it rarely makes an appearance on the menu–I’m always uncertain about cooking and buying seafood. I would also really like to learn more about preparing organ meats! I’ve had some nice grass-fed liver in my freezer for months now but pretty much have no idea what to do with it and no guts to defrost it and try!

Well, what hasn’t been said? I am new to this site, but I am inspired by it. I am stumbling forward along the path to better health. I gave birth at home 3 months ago to my first child. He has propelled my efforts because I want to be the best example I can be and I want to have energy. I have been sugar free for about 2.5 months and grain free for about two months. My partner has just joined my efforts to be healthy, but he works a lot and his job is not very conducive to healthy eating. I am a committed mother and partner, I want to provide for them, but it needs to be economical and I need my skills honed. I can’t say that I am excited about the organ meats or the fish, but I am always willing to try new things. And the way you described them made ‘em sound pretty yummy. I would love to be one of the winners because I love winning! and it would come at a time when we could really use it, both economically and gastronomically . Thanks for the chance!
