I was lucky enough to visit Chaffin Orchards last week and let me tell you, this is a glorious little patch of Heaven on Earth.

A grass-based permaculture farm located in Oroville, California in the Sacramento Valley, Chaffin Orchards raises cows, sheep, goats, chickens and other animals on pasture. Instead of using synthetic fertilizer, they allow the animals to fertilize the land.

With over 200 acres of old growth Mission Olive Trees originally planted 100 years ago, Chaffin stewards some of the oldest trees in North America. For five generations the Chaffin family has farmed this land and have had a deep respect for the environment, preservation of open space, promoting wildlife, and producing food for the local community.

But How Does Chaffin Olive Oil Taste?

Chaffin produces some of the mildest yet complex olive oil in the world. Both their mid-season and late-harvest olive oils won gold medals at the Los Angeles International Extra Virgin Olive Oil Competition.

Most olive oil producers harvest early in the season. Chaffin, risking the threat of winter storms, waits until very late in the season to harvest the majority of their olives for oil. This produces a very mild, smooth and buttery flavor, with a bouquet of subtle floral undertones.

They also produce a mid-season harvest. In this oil, a small percentage of the olives are still green and the rest is red or black. This olive oil has a bit more depth and a bold peppery finish.

Both the mid-season and late-season harvests produce delicious oils for different uses. The late-harvest oil is ideal for everyday use when you don’t want to extra flavor notes to your dish. For example, mayonnaise or olive oil ice cream.

The mid-season olive oil is slightly more robust and is ideally used in dishes where you want to pack more of a punch. I use the mid-season olive oil for salad dressing and flavorful dips, like hummus.

I have been wanting to try their oil ever since (waaay back) you said you make mayo with it. My mayo made with evoo always came out yucky so I’ve tended use sunflower or walnut. Anyhoo, I signed up for CF newsletter. Hope I win hee hee or can order this good stuff some day soon!
