Are you new to grassfed meat? Have you had difficulty cooking grassfed meat using the techniques you’ve learned for cooking CAFO (factory farm) meat?

Cooking grassfed meat is not the same as cooking grainfed meat. It requires different techniques. Stanley Fishman, author of the cookbook, Tender Grassfed Meat: Traditional Ways to Cook Healthy Meat and the blog, Tender Grassfed Meat, learned this the hard way — and is here to share his tips with us.

The Road to Tender Grassfed Meat

Stanley Fishman was almost always ill with a number of illnesses, since he was 13. The worst illness was severe, life-threatening asthma. Other illnesses included bronchitis, skin and digestive disorders, and periodic depression. Fishman worked for the Social Security Administration for 7 years, then became a lawyer.

In 1998, Fishman became severely ill due to chemical exposure, which resulted in a nearly fatal asthma attack and severe lung damage. Fishman was told that he had incurable COPD and lung damage that would never heal. He was also told that there was nothing that could be done for him, except to temporarily relieve some symptoms.

Fishman refused to accept this medical death sentence, and looked for another way. The Weston A. Price Foundation diet got all of his illnesses under control, but true healing did not come until he added grassfed meat and fat to his diet. All the illnesses healed, and Fishman enjoyed the best health of his adult life.

Fishman ruined the first grassfed meat he ate. He researched how grassfed meat had been cooked in the past, and adapted a number of older techniques to the modern kitchen. The result was Tender Grassfed Meat: Traditional Ways to Cook Healthy Meat, a cookbook designed to make cooking grassfed meat easy and delicious.

Odd, I’ve cooked through a total of almost a whole grass fed cow and haven’t had a problem ruining anything by cooking with CAFO beef methods. I do notice a huge difference between how the grassfed ground beef behaves (it seems to stick together rather than crumble), but it hasn’t been a problem. I always try to start the cooking process with the beef at room temp, I think that helps a lot.

I learned to cook my grass-fed beef the hard way. I am glad that I have gotten it down. Our meat just melts in the mouth. Starting with room temp. meat seems to help us out a lot.

We raise our own and take to the locker. Their standard for hamburger is 70%, I believe. We had them make our 90%. That has helped alot. We always have our steaks and roasts cut with generous amount of fat on them.
