Welcome to another edition of the Real Food Kitchen Tour. This week we’re featuring Brittnee Horting and the Horting Family.
What’s a Real Foodie?
A “real foodie” is someone who cooks “traditional” food. We cook stuff from scratch using real ingredients, like raw milk, grass-fed beef, eggs from chickens that run around outdoors, whole grains, sourdough and yogurt starters, mineral-rich sea salt, and natural sweeteners like honey and real maple syrup.
We don’t use modern foods that are either fake, super-refined, or denatured. This includes modern vegetable oils like Crisco and margarine, soy milk, meat from factory farms, pasteurized milk from cows eating corn and soybeans, refined white flour, factory-made sweeteners like HFCS or even refined white sugar, or commercial yeast.
We believe in eating wholesome, nutrient-dense foods that come from nature. So we shop at farmer’s markets or buy direct from the farmer, or we grow food in our own backyards.

This week I’m featuring Brittnee Horting and her family. Britnee’s a mom living in Idaho.
I got to spend some time in Sun Valley earlier this year and I loved it! It’s totally gorgeous up there, with fresh clean air and wide open skies (although my daughter, California girl that she is, was not crazy about the snow). Britnee, I hope you take advantage of all that delicious Idaho trout!
Britnee doesn’t have a blog yet but plans to start this fall, along with homeschooling.

Things You Love About Your Kitchen: I love that it is very open, there is so much room to move around and have my family all in there together! I also love the windows, they let in so much natural light and I can watch my kids playing outside. The view of the surrounding mountains isn’t to shabby either! Also, I LOVE all the cupboard space… there is almost more then I know what to do with!
Things You Would Change: The kitchen itself is great, but I would love to have more gadgets and accessories to play with!
Favorite Tools & Gadgets: I love my blender… we make a lot of kefir smoothies and so it gets used almost every day. It’s an older model, but it’s perfect for our needs.
Biggest Challenges Cooking Real Food: Finding real food! Almost all of our meat is homegrown and we get our milk and eggs from local farmers, but there are a lot of things I’m having a hard time finding around here. I’m pretty new to all this so I’m still uncovering hidden treasures…
Current Family Favorite Meal: I’m very blessed to have great eaters in my house, and they LOVE salad! I’m finding that my kids are willing to try new foods if I add them to a salad and so it’s a common meal here. We also like simple cucumber tomato sandwiches in the summer.
Favorite Cookbooks: I find most of my recipes online… at great websites like CHEESESLAVE!!

I would probably like to live there, as well. I’ve heard that they have lots of farmland. I think most of America is made up of empty farmland that needs to be used! So much for the insane idea that we have too many people on this planet.

My mom was born in New York, which has lots and lots of farmland outside of the cities.
What darling children!! How in the world do you keep your counters so uncluttered, must be the blessing of a lack of gadgets. We are a blue star family too! Lots of stars around here.
My counters are uncluttered because I was about to take pictures…they don’t normally look so clean!

Sometimes the older model appliances last longer and do a better job. I noticed that blender in the picture right away. Right after ooohing at the adorable grin on your daughter.
I believe the older models last longer, too. I believe manufacturers are using cheap materials these days so that customers can keep on buying.
Me too. I recently had to give up my 20 year old food processor. It was a workhorse. I wasn’t able to replace the bowl anymore. (did it once). My new one is nice, but it isn’t quite the same.
That blender was my grandma’s that she used for years and years and then found a new modle at a thrift store, so she gave me the older one. I had bought a blender when I got married and lasted about a year was it! My mom had the same brand as mine, just a couple models newer, and her’s just died after almost 30 years of hard use. Go Oster!

I know what you mean, Alice! My family has to get a new refrigerator this year. Our old one lasted nearly 20 yrs. It is still working fine, but takes up a lot of power. When we went refrigerator shopping last month, even the most expensive refrigerators felt so cheap in quality. They were very light in weight, and nothing compared to the older ones.

I homeschool my kids who are 10 and 12. It is a wonderful experience. I love that my kids are best friends and that we are all learning so much together.
I’m very excited to start…despite all the negative feedback I’ve had from people who don’t agree with me. My husband supports me and that’s all I need!
Ignore the negative feedback. I got lots of that in the beginning, but it dissipates. I still get a little, but all that matters is if it works for you and your family. I don’t understand the people who tell me what smart, creative, thoughtful children I have and then when they hear I homeschool, they start expressing all kinds of concerns. Hmmmmmm.
Totally agree with FarmerKimberly. We’ve home schooled for almost 3 years and people say what they will because it’s different. You have support from hubby, so that’s all that matters. Have fun – it ‘ll be a great experience and show you how to teach and love your children individually.

1. I have the SAME blender! I just recently purchased it on eBay. I wanted a vintage one #1 for the glass jar, #2 for the dependability (blenders now don’t last long at all and are so full of BPA), #3 because they work so well! Mine’s an Osterizer

2. That fresh butter photo is driving me crazy! Could you maybe explain how you make butter by shaking? I haven’t heard of that! I’d love to try it.

All you do is put the cream in a container and shake shake shake! When you’re done you have to squeeze or press out all the butter milk, but that all there is to it! It’s fun for the kids…but we also make butter in the blender and it’s much faster that way.
Isn’t there something about rinsing the butter with water in the end?
Is there a need for rinsing?
You can rinse it, it helps to get all the buttermilk out and the butter tends to last longer. When I make it in the blender I whip the cream till it’s almost done, then let it sit so all the butter rises to the top, drain off the butter milk, whip it a little more, then throw in a little cold water and whip it again. Then you have to squeeze or press it a little.
Thanks for the tips. I tried butter once and I could not get all the buttermilk out and I got discouraged. I will try again.

Whenever I look at a house the kitchen is definitely a MAJOR factor…..I think I would be the same if I loved the kitchen, I could deal with the rest of the house regardless!
Go Army!! My dad was an Army Ranger. Thank your brother on our behalf for his service to our country. Thanks for sharing pics of your cute kids and lovely kitchen. I love the windows over the sink. I have 2 blenders. A new one that works so so and one just like yours that works way better! Even highschool aged kids are amazed at how butter is made, the science teacher I work with at the local h.s. has the physical science students shake cream in babyfood jars to make butter. They are skeptical that it’s really butter, but are convinced when they get to taste! Thanks again for the fun tour.
My brother is a Ranger! He’s been deployed for 2 weeks now, but this is his 3rd tour so we are used to it…kind of. Thank you to your dad and your family for the service and sacrifce! It’s a elite group to be a part of…both for the soldier and for the family.

Yea…a gollon will alst us about a week. That way I’m not making it as often. We always have kefir pops for the kids and my husband and I have a smoothie a day, as breakfast of dessert. Chocolate Cherry is my favorite!!

Do you have raw milk, Bethany?
YES ! We do raw goats milk right now… I have access to cows but have not bought any… i was SOO against milk for so many years that goat milk was a easier jump for me… and we all like it. That is what I make yogurt out of.. I just add the cultures and put the jars in my dehydrator (excalibur box type one) and let it ferment for 8 hours. It’s thin since I don’t heat it before and since it’s goat milk

We are about to start our 15th year of home discipleship and I am always glad to hear about new families just getting started with their little ones. I, also, have to make kefir lemonade by the gallon through the summer!
I’m excited for it, I think it will be a lot of fun and that’s a huge part of why I’m doing it. School was hard for me and so I want my kids to have fun and be able to enjoy it more then I did.
Brittnee- look into Carole Joy Seid. She has some amazing lectures on tape about education kids. She uses a literature based approach. My son LOVES it, and my 2 yr old is even engaging our time we spend reading.
We use Charlotte Mason philosophy and love it. Literature based approach too!

I think that I am going to go through on online Charter School that’s based here in Idaho. I like it because I get to choose the classes and the ratio of online work and work I do with him at home. Plus there are activities with other local students, and if we do things like piano lessons they will reimburse us the cost and it counts towards his schooling. It seems like a great program. Oh…and I have full 24 hour access to the teacher, which I will need for sure!

have you ever kefired cream? if yes, have you ever made butter from the kefired cream? if yes, did it work?? was is good tasting?
I kefir a mixture of cream and milk to use for ice cream (cheeseslaves recipe). I have tasted it- and it’s SOO yummy. Very soft and creamy.

I have not…but I don’t imagine that it would taste as good as butter. My kefir always turns out pretty strong so the butter peobably would as well…not sure my kids would love that on their toast!

Yes, use kefir in cream to make sour cream… not made butter with it, though. Only made butter with raw cream.:)
I make cultured butter. I let the cream culture on it’s own- and then make the butter!
Riceinmay, you basically use cream that is starting to smell a tad, erm, cheesy? Do you purposefully leave it out of the fridge, or if you don’t use your raw cream all up that week, you then turn it int butter…? I’ve done both, and it doesn’t seem to make any difference as it’s yummy both ways.
i do water & milk kefir…. i drink some of each every day… i also do kombucha…. and now broth…. i hardly have room for any food!!!!! but i manage to eat some good food too!

do you just add the kefir grains to water for kefir water….sorry if that is a ridiculously silly question…I have never had it before and am fairly new on the fermentation journey
They have water kefir grains, but I don’t know how they are made or the difference between water grains and milk grains…
Water kefir grains, and milk kefir grains are very different. Milk kefir eats lactose, and water kefir eats other sugars. They even look different.
You can turn milk kefir into grains capable of kefiring water- but they won’t be able to be used for milk anymore, and they won’t multiply anymore either.
Water kefir grains cannot be used for milk.

the funny thing is I didn’t even notice it for like 3 days then today I saw my full water glass on the counter and realized I just don’t drink plain water anymore except first thing in the morning.
I think that’s awesome! Water doesn’t really add any nutrients to your body. In fact your body uses nutrients to digest and process the water. Kefir, kombucha, and broth all add nutrients to your body!

Thank you so much for featuring my kitchen…and for all the wonderful comments! I actually live just an hour south of Sun Valley! We drive up there often on our way to my family cabin.
My kids are my life, I became a “real foodie” for and because of them. I’ve always considered myself to be health minded and thought that I knew quite a bit, but having kids woke me up to how little I knew. And seeing how happy and healthy they are reassures me that I’m headed in the right direction!
It’s amazing how much your children change you and your outlook on life and how desperately you want to do the best for them… It’s an awesome thing.
I agree. My 2nd daughter (I have 4) is the reason we’re on this real food journey. So glad we are, even if it’s more work for me doing GAPS.
Yes, it is much more work but even just 15 days in the benefits have been wonderful

My kids are my life, too. I love them more than I could ever express. They are also the reason for my journey into real food. I grew up eating SAD. and continued to eat SAD until I had my first son. It is a slow process, but I am getting there. I always thought I would be a mom with a career, but now I can’t see living any other way than being a full time mom.
Children have a way of changing us…so thankful for that! Yes, it is a process, but so much fun along the way and just amazing how much better you feel….wouldn’t have it any other way!

I think that my kidsare fascinated by the whole process of getting milk from a cow, putting it in a jar, shaking it a bit, it turns to better, then they eat it on toast! It’s helped a lot to teach them about where food comes from.

Did you guys see the second to last Jamie Oliver show? He did a pop quiz with 17 yr old students. I couldn’t believe the questions they missed!!!!! Like where does honey come from? where does chocolate come from? where does milk come from………..It was incredibly sad!!!!!
Yes, that aired here in Australia about a month ago. It was sad to say the least, but encouraging because my 6 year old knew all the answers to the questions when I quizzed her the following day. Parents need to do their part in teaching their children basic skills and academics, not leave it up to teachers!

My number one man has been out of town for work on and off for the last 8 weeks and it has taken its toll. Not my favorite for sure.

My mom had the same one (newer model) and it just died after almost 30 years. I love how sturdy it is!
Your children are precious and I can tell you I love homeschooling although there will be days you will wonder if you are crazy for trying it- hold on to the vision of why you want to do it now for those days!
