  • 3 boneless skinless chicken breastsPasture Raised and/or Organic
  • 2cups Panko Bread CrumbsOr Gluten Free Panko Bread Crumbs
  • 2cups All Purpose Organic FlourOr Gluten Free Flour
  • 2 EggsPasture Raised and/or Organic
  • 1cup Expeller Pressed (Refined) Coconut Oil, Lard, or Bacon GreaseOr As Needed, For Frying
  • 1teaspoon Sea salt
  1. Cut each chicken breasts into 6 finger-sized pieces.
  2. In three separate shallow baking dishes or bowls, add the flour, Panko crumbs, and eggs each into its own separate bowl. Beat the eggs.
  3. Dredge each piece of chicken in the flour first and shake off the excess.
  4. Next dip each chicken piece into the egg bowl.
  5. Next dip each chicken in the bowl of Panko crumbs until well coated on both sides.
  6. Heat 1/2 inch of oil in a large skillet. Using a thermometer, check to make sure the oil reaches 350F before frying.
  7. Place 2-3 pieces of chicken in the oil at a time. Do not overcrowd or the fried chicken will be soggy.
  8. Fry on each side until golden brown, around 3-5 minutes.
  9. Once each piece is cooked, transfer to a wire rack or paper towel lined tray to cool. Season liberally with sea salt.
  10. In between frying, use a strainer to remove excess bread crumbs so your oil doesn't get too dark.
  11. Serve over white rice if desired.
