Baby lambs on sustainable farm

I don’t know about you, but I’ve always found it very interesting that the word “easter” is derived from the Latin, “estres,” which means the period of reproduction in animals. Perhaps this is why Easter is about eggs and baby chicks and baby lambs and bunnies. It’s the time to get out there and plant seeds. After a cold, dark winter, new life shoots out of the ground, and baby animals are born on the farm.

chicken on pasture

If you read my blog regularly, you know I love eggs. We typically go through about 3-4 dozen eggs per week. Our little family consisting of 2 adults and one toddler. Eggs are one of the most economical ways to increase the nutrients in your family’s diet. Eggs are full of vitamin D, vitamin A, vitamin E, omega 3 fatty acids, beta carotene, cholesterol (which is good for you), and saturated fat (also good for you). Why Pastured Eggs? I don’t just buy any eggs. I only buy pastured eggs from local farmers who keep their chickens outdoors and let them roam around in the sun, eating bugs.

Amber Waves of Soybeans

We’re going home to California tomorrow. Before we go, I wanted to share a few photographs I took today of my family’s hometown, Oregon, Ohio. Oregon is just outside of Toledo, just south of Lake Erie. Our family has lived here for generations. My great grandfather and my grandfather were farmers until they got driven [...]

Death by Salad

A friend of mine posted a query to the DNT (Discussing Nourishing Traditions) list the other day. She and her husband became violently ill from something they ate a few nights ago, and she was trying to figure out what might have been the culprit. She described in detail what they had eaten. For lunch, [...]

Horton Hears a Who

I want to share with you a wonderful comment I received from a reader, Craig, when I posted a while back on “Real French Fries” (French fries made with real grass-fed beef tallow). Few people go back and read the comments — and I don’t blame you — life is busy! But this comment is [...]

Smart Bacon = Stupid Soy

I’m always reading about people eating less meat in order to reduce their carbon footprint. These people say that the most important thing you can do to help the environment is to go vegetarian. For example, Kelly Freston wrote this article last year in the Huffington Post: Vegetarian is the New Prius: Last month, the [...]

No CAFO

Kate and I just had the yummiest lunch! It’s fun now because we can eat together (she’s eating finger foods instead of purees — and she can eat pretty much everything — of course, we’re not eating any grains yet). Anyway, I put some bacon grease in a pan, then threw in some of the [...]
