How To Render Lard and Tallow

If you read my blog with any regularity, you know I’m a big fan of lard and tallow. I use them for pie crusts, making chicken nuggets and fried chicken, onion rings and French fries, and plan to try my hand at doughnuts and potato chips. Oh, and let’s not forget about buttermilk biscuits… [...]

Primitive New Zealand Maori

Last fall I read Dr. Weston Price’s book, Nutrition and Physical Degeneration (you can read it online). If you haven’t read it yet, I strongly recommend it.
To summarize the work of Dr. Price, here’s a quote from the Weston A. Price Foundation’s brochure:
The groups Price studied included sequestered villages in Switzerland, Gaelic communities in the [...]

Sally Fallon Beats Rachael Ray and the Barefoot Contessa

Sally Fallon

There’s a great article in the Washington Post today about Sally Fallon. It turns out that her book (co-authored with nutritionist, Mary Enig) has sold more copies than Rachel Ray’s “30 Minute Meals” and Ina Garten’s, “The Barefoot Contessa Cookbook”.
In 12 years, the book [Nourishing Traditions], corrected in a second edition, has sold 310,000 copies. [...]

Homemade French Fries

We had Steak Frites tonight. Wow — was it good! I got the steaks (grass-fed) from Rocky Canyon at the farmer’s market this morning. They were melt-in-your-mouth delicious.
I served the meal with Lillet Blanc (a French apertif that tastes like orange) on ice, watered down with a little Pellegrino and a slice of orange. [...]

Roast Chicken and Ogo Watermelon Salad

cheeseslave » 08 June 2008 » In Uncategorized » 2 Comments

What a great meal, if I do say so myself.
I made the same salad from last night — it was that good. I love the combination of watermelon and red onions. And the ogo balances the whole thing with a salty sea flavor — the way anchovies complete a Caesar salad. Seth loved it too [...]

Does Eating Lard Prevent Wrinkles?

cheeseslave » 24 January 2008 » In Uncategorized » 3 Comments

Read an interesting article last night about how eating more good fat helps your body. I was particularly fascinated by this excerpt:
On a side note, I worked with a client from Mexico who was here visiting her daughter over the summer. The mother was 85 years old, very strong and healthy, and had not one [...]

Michael Pollan on Milk

cheeseslave » 07 January 2008 » In Uncategorized » 17 Comments

I was just listening to Michael Pollan on the Everyday Foods show on Martha Stewart’s channel on Sirius radio.
I am really loving his book The Omnivore’s Dilemma so I was excited to hear him on the radio.
However, I completely disagreed with him!
A woman called in and asked about feeding whole milk to children and what [...]

What If Fat Isn’t So Bad?

cheeseslave » 04 January 2008 » In Uncategorized » 5 Comments

MSNBC reports:
Suppose you were forced to live on a diet of red meat and whole milk. A diet that, all told, was at least 60 percent fat — about half of it saturated. If your first thoughts are of statins and stents, you may want to consider the curious case of the Masai, a nomadic [...]

High-fat, Low-carb

OK let me first post a disclaimer: Our scale is not the most reliable. I don’t trust it. That said, I am going to weigh myself at the gym today and see what it says.
Now, let’s go on to my news.
I just weighed myself and it looks like I lost 6 pounds since Tuesday.
All I [...]

Sally Fallon on Fats and Why They are Essential

cheeseslave » 21 December 2007 » In Uncategorized » No Comments

Fascinating interview with Sally Fallon, President of the Weston A. Price Foundation on essential fatty acids and why saturated fats are critical to good health.
Also how good saturated fats like butter, lard, duck and goose fat, and coconut and palm oil were driven out of the marketplace by corporations profiting off of soybean oil:
