I know people are going to complain when they see the photo of the pig’s head. The last time I posted a photo of offal (I believe it was the cow tongue), I got a lot of complaints.
I think we have become too sanitized and sheltered in America. Pigs have heads. Cows have tongues. And they are meant to be eaten.

Many farm fresh foodies and locavores have experienced the frustration of trying to encourage our families and friends to support local farms. A few cotton to the idea, but many do not. Rather than alienating my close friends and relations by becoming a noodge, I decided to focus on delivering the good news of a healthier way to eat on folks I hadn’t yet met.

If you read my blog regularly, you know I love eggs. We typically go through about 3-4 dozen eggs per week. Our little family consisting of 2 adults and one toddler. Eggs are one of the most economical ways to increase the nutrients in your family’s diet. Eggs are full of vitamin D, vitamin A, vitamin E, omega 3 fatty acids, beta carotene, cholesterol (which is good for you), and saturated fat (also good for you). Why Pastured Eggs? I don’t just buy any eggs. I only buy pastured eggs from local farmers who keep their chickens outdoors and let them roam around in the sun, eating bugs.

I want to share with you a letter Sally Fallon Morell wrote to President Obama (then President-Elect Obama) regarding the diet inmates in the Illinois prison system are being fed, made up largely of soy foods, and the widespread health problems these prisoners are experiencing from eating this soy diet.
